Found the solution was to reinstall iTunes atop the existing copy, allow the installer to also install the 'update needed' for the iPhone, then wait minutes for the install to complete.

Posting this to help anyone who has an issue after upgrading an iPhone and subsequently cannot get iTunes on a Mac to see the phone for syncing and backing up.
